Strawberry Bellini Jello Shots
Fruity, bubbly, and oh-so-elegant!
Ingredients
· ½ cup fresh strawberry purée (about 4–5 ripe strawberries, blended smooth)
· ½ cup prosecco or sparkling wine, chilled
· 1 tsp agar-agar powder or unflavored gelatin
· 1 tbsp sugar or sweetener, to taste (optional)
· Fresh strawberry slices or edible glitter, for garnish (optional)
Instructions
1. Prepare the strawberry base:
Wash and hull the strawberries, then blend them into a smooth purée. Strain if desired for a silkier texture.
2. Bloom the gelatin (if using gelatin):
In a small saucepan, mix the strawberry purée with gelatin (or agar-agar if using a vegetarian option). Let it sit for 2–3 minutes so the gelatin can bloom.
3. Heat and dissolve:
Add sugar, then gently heat the mixture over low to medium heat for about 1–2 minutes, stirring constantly until everything is fully dissolved. Don’t let it boil.
4. Add the bubbles:
Remove from heat and let cool slightly (about 5 minutes). Slowly pour in the chilled prosecco, stirring gently to keep the fizz.
5. Pour and chill:
Carefully pour the mixture into Push Up Cups. Refrigerate for at least 3–4 hours, or until set.
6. Garnish and serve:
Top with a tiny strawberry slice, a dusting of edible glitter, or a small mint leaf for an extra touch of glamour.
Tips
Use ripe strawberries — the sweeter the fruit, the brighter the flavor.
Let the prosecco cool before adding it; warm bubbles go flat quickly.
Avoid over-stirring once prosecco is added — gentle mixing keeps the sparkle.
For a fancier look, layer the mixture with a bit of clear gelatin for a “champagne bubble” effect.
Make it mocktail-friendly: Swap prosecco for sparkling lemonade or non-alcoholic cider.
