Piña Colada Jello Shots (with Coconut Milk!)
Tropical, creamy, and irresistibly smooth!
Ingredients
- 1 packet (about 1 tbsp) unflavored gelatin
- ½ cup pineapple juice (not from concentrate for best flavor)
- ½ cup coconut milk (full-fat for creaminess)
- ½ cup white rum (or coconut rum for extra flavor)
- 2 tbsp sugar (optional, for added sweetness)

Bloom the gelatin:
Pour pineapple juice into a small saucepan and sprinkle the gelatin over the top. Let it sit for 2–3 minutes to soften. -
Dissolve the gelatin:
Heat the mixture over low heat, stirring gently until the gelatin fully dissolves (do not boil). -
Add creamy goodness:
Remove from heat and whisk in coconut milk, sugar (if using), and white rum. Stir until smooth and fully combined. -
Pour into cups:
Carefully pour the mixture into Push Up Cups, filling each about ¾ full. -
Chill to set:
Place in the refrigerator for at least 3–4 hours, or until firm and lightly jiggly. -
Serve tropical-style:
Top with a tiny dollop of whipped cream and a mini pineapple wedge or cherry for a cute presentation.
Tips
Use chilled ingredients — it helps the gelatin set faster and evenly.
For a stronger shot, reduce the coconut milk slightly and add a bit more rum (but not too much, or it won’t set).
Make them non-alcoholic: Swap rum for extra coconut milk or pineapple juice for a kid-friendly tropical treat.
Serve cold! These shots taste best when well-chilled — keep them refrigerated until right before serving.
