  1. Bloom the gelatin:
    Pour pineapple juice into a small saucepan and sprinkle the gelatin over the top. Let it sit for 2–3 minutes to soften.
  2. Dissolve the gelatin:
    Heat the mixture over low heat, stirring gently until the gelatin fully dissolves (do not boil).
  3. Add creamy goodness:
    Remove from heat and whisk in coconut milk, sugar (if using), and white rum. Stir until smooth and fully combined.
  4. Pour into cups:
    Carefully pour the mixture into Push Up Cups, filling each about ¾ full.
  5. Chill to set:
    Place in the refrigerator for at least 3–4 hours, or until firm and lightly jiggly.
  6. Serve tropical-style:
    Top with a tiny dollop of whipped cream and a mini pineapple wedge or cherry for a cute presentation.

Tips

Use chilled ingredients — it helps the gelatin set faster and evenly.
For a stronger shot, reduce the coconut milk slightly and add a bit more rum (but not too much, or it won’t set).
Make them non-alcoholic: Swap rum for extra coconut milk or pineapple juice for a kid-friendly tropical treat.
Serve cold! These shots taste best when well-chilled — keep them refrigerated until right before serving.
